This January, two of Britain’s most acclaimed countryside pubs — the Michelin-starred Nut Tree Inn in Oxfordshire and the Bib Gourmand–holding Galvin Green Man in Essex — are joining forces for an exclusive culinary collaboration that promises to be one of the most exciting dining events of the winter season.
For two nights only, on 15 January in Chelmsford and 29 January in Oxfordshire, diners will be treated to a unique menu exchange that brings both award-winning kitchens under one roof. The collaboration sees chefs from each pub step into the same kitchen, cooking side-by-side as they present a four-course menu designed to celebrate their shared passion for modern British gastronomy.
The partnership brings together two deeply respected culinary teams: The Nut Tree Inn, led by Michelin-starred chef Mike North and his wife Imogen, and the Galvin Green Man, founded by Michelin-starred brothers Chris and Jeff Galvin. Despite their different histories and locations, both pubs have become beloved fixtures in Britain’s rural dining landscape, celebrated for pairing relaxed hospitality with refined, flavour-led cooking.
A Michelin-Starred Evening in Essex — 15 January
The first evening of the collaboration will see The Nut Tree Inn take over the kitchen at the Galvin Green Man. Guests in Chelmsford will be served a menu crafted to showcase the distinct strengths of each team, beginning with a dish from The Nut Tree Inn: a bright and beautifully balanced salad of Cornish crab. Paired with citrus fruits, chilli and coriander, it offers a fresh and delicate introduction to the evening.
The second course comes from the Galvin kitchen, which will present its elegant Fillet of sole ‘Veronique’. Served with Champagne sauce and accompanied by sea vegetables, the dish brings classic French technique into harmony with carefully sourced British produce.
The main course returns to The Nut Tree Inn, where the focus turns to a refined take on Guinea fowl. Diners will be served roast breast paired with a rich leg tart, all finished with a luxurious morel and Madeira sauce, hazelnut and a silken truffle cream.
To conclude the evening, the Galvin team will present a Yorkshire rhubarb soufflé. Light, fragrant and served with crumble and milk ice cream, it promises a suitably uplifting finish to a winter night.
A Taste of Essex in Oxfordshire — 29 January
Two weeks later, the collaboration moves west to The Nut Tree Inn in Oxfordshire, where the Galvin Green Man will take the lead on a second bespoke menu.
The evening begins with a true Galvin signature: Lasagne of Dorset crab. Enriched with beurre Nantaise and topped with fresh pea shoots, the dish offers a buttery, indulgent and unmistakably Galvin-style start.
The second course, crafted by The Nut Tree Inn, features roasted veal sweetbreads served over a pearl barley and Jerusalem artichoke risotto. A delicate maple glaze ties the dish together, bringing warmth, depth and the pub’s trademark produce-led creativity.
For the main course, the Galvin team will serve a celebration of Cumbrian beef — a roast fillet paired with slow-cooked cheek. Presented with truffle mash and a rich Bordelaise sauce, the dish embodies the pub’s love for comforting British flavours elevated with meticulous technique.
The menu concludes with one of The Nut Tree Inn’s most beloved desserts: sticky toffee pudding. Paired with caramel apple and vanilla ice cream, it offers a nostalgic yet indulgent finale.
