“Pie Night is one of my favourite traditions each year in New York. We first started it 4 years ago at Dominique Ansel Kitchen in the West Village, and for us, it marks the start of autumn (which, for a pastry chef and bakery, is also pie season). That fall, our team went on an apple picking trip to an orchard in New Jersey, and we ended up picking more than a hundred pounds of apples. And it got us thinking about pies and what we could do with all of these apples. So many of our team members told me about memories they had of baking pies with their families during the fall and holidays – from sweet pies like classic apple pie and key lime pie, to savoury pies like chicken pot pie and shepherd’s pie. Some had pie crust recipes handed down from their grandparents, and I realised that pies are a family memory that we all can remember, sitting around the dinner table eating together, no matter where we’re from. So we’re excited to bring Pie Night to Dominique Ansel Bakery London for the very first time this October and for it to become a tradition here in London too,” commented Chef Dominique on the event.
