    To create pumpkin puree from a fresh pumpkin, begin by selecting a pumpkin that showcases inherent sweetness, ideal for both sweet and savoury dishes. Preheat your oven to a moderate temperature to ensure even cooking. Meanwhile, thoroughly wash the pumpkin, then proceed to remove the stem and cut the pumpkin in half.     When it comes to canned pumpkin, here’s the measure you’re looking at:

    • A 15-ounce can holds just below 2 cups of pumpkin.

    In contrast, fresh pumpkins offer varying amounts of puree. Below are the expected yields from cooked and strained fresh pumpkins:

    • 2½ pound pie pumpkin: approximately 1¾ cups of puree
    • 3½ pound pie pumpkin: roughly 2½ cups of puree

    Choosing the Ideal Pumpkin for Puree

The variety known as ‘sugar pumpkins’ or ‘pie pumpkins’ is typically sweeter and more flavourful than those grown for carving. When lifting the pumpkin, it should feel dense for its size, which indicates a good flesh-to-seed ratio. If you can buy your pumpkin from a local source such as a farm shop or a market, that’s ideal. Once purchased, keep the pumpkin in a cool, dry place; it will stay fresh for up to four weeks.

    Ensure your pumpkin is well-cleaned by giving it a good scrub. Proceed by cutting into roughly 12cm square pieces, removing and setting aside the seeds if you wish to roast them later, and discarding the stems. Eliminate any fibrous strings as well.

    Line a shallow baking tray with foil and lay the pumpkin pieces on it, skin side facing up. Tightly cover the tray with foil and roast for 60 to 90 minutes, or until the pumpkin becomes tender.

    Once sufficiently cool to handle, peel away the rind and transfer the soft pumpkin flesh to a blending apparatus. You may use a blender, food processor, or a container suitable for manual mashing. For a velvety texture, blend until smooth, while those preferring a textured purée should blend minimally.

    For an extra touch of finesse, press the purée through a double-layered cheesecloth set in a fine-mesh sieve for about an hour, discarding excess water that drains off.

    Store the resulting homemade pumpkin purée in the fridge within a securely sealed container for up to three days; alternatively, freeze it for as long as six months. When freezing, ensure that air is expelled from the storage bag or container to maintain freshness. This homemade purée is an excellent base for dishes like roasted pumpkin soup or an ingredient in recipes calling for canned pumpkin, and it can serve as a delectable filling in sausage-stuffed pumpkins.

    Microwave Method for Preparing Fresh Pumpkin Purée

    Thoroughly wash the pumpkin skin before starting the purée process. Proceed to cut the pumpkin into uniform 5-inch square pieces, removing stems. Be sure to extract the seeds and the fibrous materials inside.

    For microwaving, place the pieces in a microwave-safe dish, and cook on full power. The guideline is 7 minutes of cooking time per pound of pumpkin, turning the slices occasionally to ensure even cooking throughout.

    Once cooked, transfer the pumpkin flesh, in segments if needed, into a blender or food processor. For a silky texture, purée until velvety-smooth. If a more textured purée is desired, pulse to preferred consistency.

    Strain the mixture through a sieve lined with double-folded cheesecloth. This will help remove excess moisture. Rest it for an hour, then press gently to extract any remaining liquid, which should be discarded.

    Store the resulting purée in the fridge for up to three days, or freeze it, well-contained, for as long as half a year.
